Eggplant stir fry with minced pork

Steps to cook

#1. Wash the eggplant and cut into long strips. Add one tablespoon of salt, then mix the salt and the eggplant evenly.  Set aside and let marinating for about 10 minutes. This step is important because this treatment is to prevent oxidation and discoloration of eggplant.

#2. While marinating the eggplant, chop a piece of pork into the filling.

#3. Add proper amount of soy sauce, cooking wine and raw powder to the meat filling and marinate for 10 minutes.

#4. Take a small bowl and fill it with half a bowl of water. Add some cornstarch, a little vinegar, a small spoon of white sugar and a certain amount of soy sauce. Stir it together for later use (mixing ratio: soy sauce, vinegar and white sugar, 3:4:3).

#5. Cut ginger, garlic, chilli, green onion and set aside.

#6. The ingredients are now all ready, preheat the pan slightly, add the vegetable oil.

#7. Squeeze out the excess water from the marinated eggplant, then fry it in the pan, when the oil comes to a boil(Make sure the temperature of the oil is high). About a minute, scoop it up when the eggplant become soft, but can’t be too soft.

#8. Add the prepared ginger, garlic, Thick broad-bean sauce, and stir-fry with the oil left in the prev step until fragrant.

#9. When the pork turns white add the green pepper, red pepper and stir a few times, then add the eggplant, stir fry a few time .

#10. Pour in the prepared sauce and stir fry.

Ingredients

  • 2 - Eggplant
  • 400 g - Pork
  • half - Ginger
  • 5 - Red peppers
  • 4 - Green peppers
  • 2 - Scallion
  • 1 - Garlic
  • A few - Vinegar
  • A small spoon - White sugar
  • A few - Cornstarch
  • A few - Thick broad-bean sauce
  • A few - Soy sauce
  • A few - Salt

Tips

  1. Mixed liquid seasoning should not be too more soy sauce, as the eggplant is salted and the bean paste is added.
  2. Don't fry the eggplant too long.
  3. Cut the eggplant in advance and marinate it with salt for ten minutes to ensure it does not turn black due to oxidation.
  4. Before the eggplant goes into the pot, the temperature of the oil should not be too low.
