The main ingredient of this soup is wax gourd, wax gourd is rich in water. Sweet is the main characteristic of this soup, “sweet” does not mean the sweet of sugar. It’s a kind of flavor of Chinese food, which usually means fresh.
Add the pork ribs and cold water to the pot, add the scallions, cooking wine, bring to a boil over high heat, then remove the pork ribs when frothy. Soak the dry mushrooms in water until soft.
Add ribs, carrots, shiitake mushrooms, wax gourd and ginger slices to a pot. Add enough water and bring to a boil.
When the water boils and foam appears, turn to medium heat and simmer for 80 minutes.
Season with salt before serving.
